Another Day, Another Yummy Green Soup

Yes, it is another day in my household, but my little one still continues the green theme when choosing what he wants to eat, especially when we talk about cooked meals.

My kid loves soups and because the constant theme at the moment is the colour green, I always put some green vegetables when I prepare soups. Today I decided to make a vegetables soup that turned out so delicious that even I, that would definitely prefer something else rather than soup, had soup for lunch. Maybe my little one was right after all to like soups πŸ™‚

Today try this again easy to make soup, which I made with different vegetables that I had at home – spinach, green beans, potatoes, sweet potatoes, carrots, onions. My aim was to make a thick, rich in favour green soup, packed with all the right nutrients from the vegetables. My fussy eater liked it a lot, hope you give it a try as well.

Green Vegetables Soup


  • 100gr spinach – fresh or frozen

  • 1 sweet potato, peeled and cut in cubes

  • 3-4 medium-sized potatoes, peeled and cut in cubes

  • 300gr green beans

  • 4 carrots, peeled and cut in rings

  • 2 onions, peeled and cut in half-rings

  • 2 chicken stock cubes

  • parsley, black pepper, dill, paprika


  1. In a pot put all the vegetables, add the crumbled stock cubes and seasoning, stir well

  2. Add water – to cover the vegetables and a little bit more

  3. Boil over a medium heat for 20 minutes, until the potatoes are ready

  4. Cream the soup using a kitchen blender

Serve with crackers or pretzels, my little one’s all time preferred combination.
