Are You Feeling Blue? Try This Feel Good Green Soup

I would continue the theme I started recently on my blog – presenting recipes how to make an easy and really delicious soups. I can serve soups both for a started and like a main meal. Depends how hungry we are and how tired everyone is – the longer the day was, the happier everyone is with a warm bowl of soup in front of them.

It turns out my little ones just love soup, especially the creamed vegetables ones. That is why I try to make at least one soup every week, using different vegetables.

Today I would like to offer you a recipe for an easy meal suitable for the whole family, even the small ones. I present my interpretation to the courgette soup. I usually make it by adding only vegetables and some feta cheese, but, because the youngest member of our family adores salmon, I decided to indulge him and add some to the soup.

Courgettes Soup with Salmon

Ingredients:

  • 5-6 courgettes

  • 2-3 garlic cloves

  • 4-5 potatoes

  • seasoning – salt, black pepper, parsley, dill

  • salmon, pre-baked (optional)

  • a knob of butter

Preparation:

  1. If using the fish, start by first preparing the salmon – wrap in in foil and bake it in the oven at 180-200ºC for 20-25minutes

I didn’t season the salmon before baking it as it would be added to the soup later, but if you have any seasoning you would prefer to use, just use them and make this recipe your own and even more special.

  1. Start preparing the soup: cut the courgettes and potatoes in cubes, put them in a pot. Add the garlic cloves and water to cover the vegetables. Boil them for 20 minutes or until the potatoes are soft

  2. Decant the water from the pot where you boiled the vegetables in another container and put aside

  3. Purée the boiled vegetables (courgettes, potatoes, garlic) using the kitchen blender. Start adding a ladle at a time from the water you kept – add as much as you want, until you reach the desired thickness of the soup

  4. Tear the salmon in pieces and add them to the soup, season and blend again

  5. Return to the hot-plate to heat, add a knob of butter to glaze

Enjoy the soup hot, warm or cold; suitable for freezing.

    Hi Ellie, this soup looks delicious! I love a good bowl of nice warm soup when it’s cold out and this one seems like it is also very good for you and has a bit of substance!
    The salmon adds some protein which is great! I love garlic too and this soup is sure to make you feel great.

      Thank you. I sometimes struggle how to make soup exciting to eat, but my little one loves salmon and thanks to him I tried this recipe. If you enjoy having soup in the cold weather, try some of the other recipes I presented and I would love to hear your suggestions how to better them.
