Aubergine Salad – A Smoky, Delicious, Light Accompaniment To Any Dish

I like having a salad for dinner,. Just a salad is enough, depending how big 🙂 you make it and what ingredients you are using.

I think salads offer great diversity and can be extremely delicious. They are usually made with fresh vegetables, they are healthy and satiate well the hungry people at home.

I am presenting one of my favourite salads that I use to serve as a side dish together with any other main I have cooked – vegetable or meat dish. This Aubergine Salad is very easy to make, is suitable for every member of the family, it is smoky, just gorgeous.

The combination of flavours – baked aubergine, garlic, vinegar, they all add different tastes to the platter and this marinated vegetable you can have any season of the year. This salad is equally good served in the hot months or in the cold of the winter.

Marinated Aubergine Salad  Marinated aubergine salad

Ingredients (serves 2):

  • 2-3 aubergines/egg-plants

  • 4-5 garlic cloves, cut finely

  • 5-6tbsp olive oil

  • 3-4tbsp vinegar

  • salt and pepper


  1. Prepare the marinade: mix the garlic cloves, olive oil, vinegar and seasoning, stir well. Leave aside till needed

You can add ½tsp of honey to the marinade as well, if you want. This way the marinade adds some sweetness to the smokiness of the baked aubergines.

  1. Prepare the aubergines: wash them, slice them in rounds, salt a little bit and leave them to stand for 30 minutes. When the aubergines are ready for cooking, wash them and arrange on an oiled tray and bake in the oven at 200°C for 20-25minutes

  2. After removing the baked aubergine rounds from the oven, let them cool a little. Then slice in cubes and add the marinade. Leave for a few hours in the fridge to absorb the flavours

    Actually, aubergine salad can be eaten in any season and can be combined with any main dish that just still delicious. I’ve never tried it with honey, you do not think is going to sweeten much? 🙂 I’ll try.

      Renan, thank you for your coments.

      I usually don’t add honey to the dressing, because I like the taste of aubergines. But, because aubergines have a very distinctive taste that may not appeal to everyone, you can add honey. The dressing is gorgeous and because you add just a little bit sweetness, it’s not too much. Not only hat, but the vinegar balances the flavours.
