Bring Some Summer Feelings To The Table, Try This Courgette Gratin

Now that the spring is coming and the weather is getting warmer and sunnier, I find myself that I try to serve recipes that my family usually eats in the summer.

I realised that if I serve an easy dinner recipe that the whole family could enjoy, but using vegetables that I normally associate with other seasons of the year, I provoke the feelings that those dishes bring.

I present you a dish that is very easy to make, I make it all the time in the summer and today I wanted to diversify the vegetables I serve on the table (because I noticed in the winter I cook predominantly potatoes 🙂 ).

Try this courgette gratin with yoghurt sauce:

  • 5-6 courgettes (zucchinis)

  • 200gr feta cheese, crumbled

  • 2 eggs

For the bechamel sauce:

  • 25-50gr butter

  • 3tbsp flour

  • 1 cup milk

  • 100gr cheddar cheese, grated

  • seasoning – salt, black pepper, parsley (optional)

For the yoghurt side sauce:

  • ½ cup plain yoghurt

  • 1-2 garlic gloves, cut into very small pieces

  • seasoning – salt and dill (according to taste)


  1. Grate the courgettes, squeeze out the water and mix with the feta cheese and eggs

  2. Prepare the bechamel sauce:

  • in a pan melt the butter and add the flour, blend them together

  • add the milk and stir constantly until the ingredients are well incorporated and the sauce thickens

  • add the cheese and seasoning (if using) and stir

  1. When the bechamel sauce is ready, transfer it to the container with the courgettes, stir all the ingredients well

  2. Pour the mixture in a casserole dish and bake for 30-35 minutes at 180°-200°C

  3. I serve with with a yoghurt side sauce (for the sauce just add the ingredients and stir)

The dish can be served both warm and cold.

    Sounds mouth watering! I love these easy to make dishes. We like to eat several times a day, hehe at least I do.. but with active lifestyle we usually don’t have too much spare time for cooking.
    Basically courgette is the very same thing as zucchini right? I’ve noticed they’ve also been referred as marrow, or simply squash or pumpkin.
    This recipe definitely has something for my insatiable hunger meanwhile it consists simple, obtainable ingredients which is excellent. Everybody should be able to cook this one. It’s luxury in my eyes that it can be served both warm & cold.

      Hi Henry. Courgettes (in Europe) are the same as zucchinis (in US), but are different from squash and pumpkin (which are sweeter).

      I also like this recipe, because sometimes when you are in a hurry you don’t even have to warm the dish, especially in the summer 🙂

    Wow this sounds so delicious! I love cooking with vegetables and doing things a little bit different to boring boiled veg and this recipe sounds amazing! The only problem is I cant eat dairy so this recipe would really hate me…do you have any idea how to make this without dairy ingredients? Thanks!

      Hi Anne. I have never made this recipe without the dairy products (cheese, milk), but I believe even if you use the non-dairy alternatives (soy or rice milk, almond feta cheese, etc.) you can have a delicious meal.

      Please try it using non-dairy products and share with me the results. I would love to know if they work as well.

    Always been a fan of good food and love to eat. Your recipe courgette gratin from the ingredients is one I know I have not tried before.

    I’ll write down the ingredients and steps to give it a try as I always like to expand my mealtime choices with new recipes.

    I usually find if it includes cheese, I like it and Yogurt is also right up there as well.
