Celebrate This Festive Season By Treating The People You Love – Russian Cake

Easter is fast approaching and, although I know that most of you expect me to share a recipe of how to prepare lamb, I was thinking about a recipe how to make the festive season even more enjoyable and pleasant, for you and for the people you love.

Today, I want to share with you a cake recipe I recently tried and the result was really yummy – Russian cake*. The cake has delicious, delicate layers and is covered with smooth cream, made from all the right ingredients – Philadelphia cream cheese and condensed milk.

The preparation of the cake is not difficult, but it could take some time, mainly because you have to bake several cake layers and make the cream. Assembling the cake is easy and when you take the cake out of the fridge everyone present would be surprised how beautiful this cake is.

Try spoiling yourself this year and prepare yourself for the holidays that are coming.


Russian Cake 


  • 1 egg

  • 1 cup sugar

  • 4tbsp soft butter + 16tbsp

  • 1/3 cup milk

  • 1tsp bicarbonate of soda

  • 2 cups flour

  • 1 can condensed milk

  • 250gr Philadelphia plain cheese

  • 220ml double cream

  • 200gr flaked almonds

  • strawberries and fresh mint, for decoration


  1. In a heatproof dish using a mixer beat the egg and sugar until fluffy and white, add 4tbsp soft butter, milk and bicarbonate of soda. Continue beating for a minute or two more

  2. Place the bowl over a pot of boiling water and stir until the batter thickens, about 10 minutes

  3. Remove from the hot plate and add the flour, mix until the ingredients are well incorporated. Leave to cool a little

  4. Divide the batter into 5-7 balls, sprinkle flour on the table and roll out each one, one by one. Grease a cake tin and sprinkle flour. Place one roll out layer of batter in the cake tin and using a sharp knife cut the excess parts. Bake for 6 minutes at 180°C oven. Continue baking the layers until you finish the prepared balls

  5. Prepare the cream – using the mixer beat the rest of the butter together with the condensed milk, cream cheese, double cream and mix until you get a thick cream

  6. Assemble the cake: on a serving plate place one of the cake layers, cover with thin layer of cream. Continue alternating cake layer and cream, until you’ve used up all the cake layers. Cover the last cake layer with cream and spread some on the side of the cake. Cover the cake with flaked almonds and press also on the sides

  7. Leave the cake in the fridge overnight. Before serving decorate with strawberries and mint leaves
