Since I was a child I remember my mum making these extremely easy to make, not something special, but extra scrumptious sandwiches for the kids to enjoy – for breakfast, as an afternoon snack or as dinner.
I loved the delicious smell of melting cheese and I still love it. I think sometimes the most simple things can be really yummy and I think my kids would continue eating those sandwiches as long as I can make them.
Today I am presenting a time-proven recipe that could be ideal for the lunch box at school, for the lazy weekend mornings when you still want to serve warm breakfast to the people you love or just make a quick dinner to eat in front of the TV.

Cheese Sandwiches in the Oven
Ingredients (2 servings):
4 slices of bread
200gr feta cheese, crumbled
100gr grated cheddar cheese
20gr soft butter
Line a baking tray with grease-proof paper and arrange the slices of bread
Butter two of the bread slices and cover with grated cheddar cheese
In a bowl, mix the crumbled feta cheese with the egg, mix until well incorporated
Divide the feta cheese mixture over the two remaining bread slices
Bake the cheese sandwiches in the oven at 190-200°C for 10-15 minutes, until the bread toasts and the cheese browns
Serve hot or cold, with tomato slices on top, salad or as a side-dish to your main.
It’s a very easy meal you can make without spending too much time in the kitchen for everyone to enjoy. I sometimes do those delicious cheese sandwiches in the oven just because nobody can think what they want to eat, but everyone enjoys melted hot cheese.
