Chicken Meatballs – Yummy, Light, Healthier

My family and especially my husband love meatballs, all kinds – beef, beef and pork or chicken meatballs. That is why I very often have to make different recipes with meatballs.

I should admit that the least often I make chicken meatballs, I don’t know why. Today I decided that it is time my loved ones had something more healthy and made these chicken meatballs. The recipe is very easy to follow and make, the meatballs are so delicious, so moist, so inviting to try that it was hard to resist the temptation.

Even if you don’t like meatballs (like I do), I think this recipe might change your mind and you would like to try them.

The meatballs were a delicious meal as they were, but you can always add something to make the dish even more scrumptious – salad, potatoes, tomato sauce, etc.

Chicken Meatballs 

Ingredients:

  • 400gr chicken breast, diced

  • 2 small-to-medium courgettes/zucchini

  • 1 egg

  • 3-4 spring onions, cut in small

  • salt, pepper, parsley, smoked paprika, dill, oregano

  • ½ cup flour

  • oil for frying

Preparation:

  1. Grate the courgettes and using a piece of cloth squeeze out the liquid

  2. Put all the ingredients in a large bowl and mix well

If you prefer the mixture moister – add an egg, if you think it is too moist – add a couple of spoons of flour.

  1. Using your hands, shape meatballs from the mixture, roll in flour and fry in hot oil until golden-brown

Serve with fresh salad and baked potatoes.
