Chicken Pot Roast In The Multi Cooker – Feed The Whole Family

I continue using my multi cooker on a regular basis and I am still happy how it helps me create delicious and nutritious meals without much effort from my side.

Today I am presenting a recipe I’ve recently tried from the cook book I mostly use when I am using my multi cooker – 200 Light Slow Cooker Recipes.

The recipe I’ve used is for French Style Chicken Pot Roast and I adapted it to be made in my multi cooker, using only the ingredients my family likes. The result was a beautifully cooked, succulent chicken with slightly lemony taste, garnished with lovely potatoes, peppers, tomatoes and carrots. Yum!

Chicken Pot Roast in the Multi Cooker 

Ingredients:

  • 4-6 chicken thighs – washed and ready to cook

  • 500gr potatoes, cut in cubes

  • 2 carrots, cut in rounds
  • 1 red pepper, deseeded and cut in strips

  • 1 yellow pepper, deseeded and cut in strips

  • 5-6 garlic cloves

  • 250gr cherry tomatoes, halved or tomatoes, cut in cubes

  • ½ lemon, cut in half-rings

  • 1-2tsp Italian seasoning

  • salt and pepper

  • 1-1.5 litre chicken stock

  • 80gr black olives, pitted and halved

  • 1-2tbsp olive oil

Preparation:

  1. Put the oil in the multi cooker pot and heat it using the FRY program. Put the chicken in the hot oil and fry it until slightly golden

  2. Turn the multi cooker off while arranging all the rest of the ingredients around the chicken in the pot. Put the potatoes, peppers, tomatoes, carrots, garlic and tomatoes in the multi cooker, season.

  3. Pour the chicken stock over the chicken and vegetables, add the olives and arrange the lemon rings on top

  4. Choose the cooking program – STEW, adjust the cooking time – you will need between 1,5 and 2 hours (cook until the chicken is thoroughly cooked and no clear juices run when pierced). Press START

  5. When the cooking has completed, the multi cooker would keep the meal warm using the KEEP WARM program. Turn the multi cooker off

If you want your dish to have that nice golden burn from the baking, put the dish under the grill.

Serve the meal with nice freshly made salad. Enjoy!
