Chicken with rice is a traditional recipe, for my country and for my family. My nan used to make it, then my mum and now I am often preparing this delicious recipe for my loved ones. And they all love it.
I like rice dishes, but if there is something else on the table, I would choose it. But the way my mum used to make this rice dish, with additional flavours, was exceptionally good. Hope you like it too.
The recipe I am presenting today is very easy to make, is full with flavours, comes with portions of vegetables to fill you up with energy and is suitable for the whole family. I like this recipe, because you can make it quickly and it is always super yummy.
And whenever I eat it, I go back to the days when I was a kid and my mum would make us chicken with rice. 🙂
This recipe is suitable to make it even during the busy weekdays to treat everyone at home with a satisfying dinner.

Chicken with Rice
2-3 onions, cut in small cubes
2-3 carrots, cut in small pieces
1 leek, cut lengthwise and then in half moons
4-5 chicken thighs
1 cup rice
4 cubs hot water
2-3 chicken stock cubes
2-3tbsp olive oil
salt and pepper, dried dill
In a frying pan, heat the oil and add the onions and leek. Fry for a few minutes until tender, add the carrots and rice and stir everything. Season with salt, pepper and dill. Add the crumbled chicken stock cubes, mix well
In a deep tray pour the rice mixture and add the chicken thighs on top
Add 3-4 cups of hot water and bake at 200°C for 30-40 minutes or until the rice is tender and it has absorbed the whole liquid
If the rice needs some more time, but there is no more liquid – just add one more cup of hot water and continue baking.
You can use chicken broth instead of hot water, then just skip some or all of the chicken stock cubes.
Serve hot with fresh salad.
