Classic Soup Combination With Added Deliciousness, Try It And You Will Love It

I like serving soups to my family. I think they are easy to make and my kids and my husband think that, because they are always very yummy and usually easier to eat (haha, doesn’t have much to chew), they are very nice meals.

We love the classic combinations for soups that everyone has tried – tomatoes with basil, pea and ham, courgettes and garlic, etc.

But sometimes I want to add something else, something we love to eat and I think would go well with the overall taste of the given soup.

I am presenting today I very easy to make soup that not only doesn’t need much preparation, but is ready in no time.

Try this Tomato soup with roasted peppers and garlic:

Tomato Soup (with Peppers and Garlic) Tomato soup

Ingredients (about 6 servings):

  • 1kg tomatoes or 2 tins chopped tomatoes

  • 3-4 roasted peppers

  • 2-3 gloves garlic

  • 2-3 tbsp olive oil

  • 1-2tsp basil

  • 1.5l stock (vegetable or chicken)

  • seasoning – salt, black pepper, parsley

Preparation:

  1. Cut the tomatoes in wedges and put in a tray together with the garlic, sliced roasted peppers and olive oil. Bake for 20 minutes at 180°-200°C

If using tinned tomatoes, just place them in the tin

  1. Purée them using the kitchen blender, add basil

  2. Put the blended vegetables in a pot and add the stock and seasoning

I sometimes use stock cubes added to the needed amount of water, instead of stock

  1. Heat the soup through

Serve hot.

The soup has a very delicate taste of roasted peppers, which together with the tomatoes and garlic, makes it very yummy.

Try this soup as a main course or serve it just as an entrée.

    I love serving soups as well! Especially during the cold winters we have here up in Canada where I am located.
    Two questions about this tomato and garlic soup… 1) Do you just purchase roasted peppers, or do you roast your own? I’ve tried roasting my own with very little success, so I’d love to find a good canned one if there is one out there. And 2) Does this soup freeze well if there are leftovers?

      Hi Marlaine, I usually use ready-made roasted peppers as I don’t have the time, but if you do that yourself the result would be even more delicious. When I roast peppers, I do it on the hot plate until theyroast/burn on every side, turning them, and immediately put them in a bag with a piece of paper and tie it, leave them to stand for an hour and then remove the skins easily.

      Yes, you can freeze the soup, I regularly do that myself. Just bare in mind that freezing changes the texture of the soup.

    I like this post, I love soup but have always struggled with different recipes as I find it always comes out wrong.

    This is kind of embarrassing as its a very easy meal to make but maybe if I give this one a go I’ll finally have success. I like the combination of ingredients on this recipe, looking very forward to making it.
