My family likes soups, especially during the winter when it is cold and a nice warm bowl of delicious meal is just what you need to feel fine in the evening.
Today I am presenting one very easy to make recipe that doesn’t need a lot of time, but the result is so yummy. Try this Corn soup that is ideal for everyone at home, even the small ones.
After I made the soup I creamed it using the kitchen blender, but you don’t have to do that if you don’t want to. Just cut the potatoes in smaller pieces, for easy eating.
I also added some grated cheese when I served it – for texture, density and flavour.

1 tin (300gr) sweetcorn
2 onions, cut in slices
5-6 potatoes, cut in cubes
2 carrots, cut in rings
1-1,5litre chicken stock
salt and black pepper, parsley
2tbsp olive oil
In a pot, heat the olive oil and fry the onions and carrots for a few minutes – 3-4 minutes
You can add a glove or two of garlic, cut in very small pieces, when you fry the onions and carrots. Garlic complements the sweetcorn soup flavours nicely, although I sometimes prefer not to use it.
Add the sweetcorn, potatoes, chicken stock and seasoning and boil at medium heat for 20 minutes or until the potatoes are soft
Using the kitchen blender cream the soup and make it smooth and inviting to try
Serve with hot toasted bread. Sprinkle some grated cheddar cheese when serving, if you want.
