Creamy Chicken With Cheese – Easy, Quick, Yummy

I love easy and quick to do recipes. I am always on the search for new recipes how I can do something really delicious that doesn’t need a lot of time or effort to make. And today, in tone with the lazy mood after Christmas, I want to present one recipe that my mum used to make – creamy chicken with cheese.

This recipe is super easy to make, takes only minutes to have a delicious dinner, but the flavours and taste are phenomenal. Of course, double cream and cheese is a combination that is always a winner. And the gherkins add some saltiness, together with their hint of vinegar. I think the end result was smoky (because of the cheese I’ve used), creamy, crunchy (from the gherkins), yummy chicken meat dinner.

This dish is ideal to make now and continue celebrating the holidays or any day or night of the year. I, personally, usually prepare it for our date nights with my husband, mainly because the kids prefer meals that don’t require them to chew or because they prefer meals made of vegetables.

I think this recipe could be an easy escape when unexpected guests arrive and you have to serve something quickly or when you have to cook something and make your mother-in-law happy. Or your mother πŸ™‚

Creamy Chicken with CheeseΒ 

Ingredients:

  • 2 chicken breasts, cut in bites

  • 150gr smoked cheese, cut in pieces

  • 250gr chestnut mushrooms, cut in slices

  • 150ml double cream

  • 5-6 gherkins, cut in cubes

  • salt, pepper, dried chives

  • 1-2tbsp olive oil

To serve:

  • toasted bread

Preparation:

  1. In the frying pan heat the oil and add the mushrooms. Fry until almost all the liquid disappears

  2. Add the chicken meat and fry for a few minutes, until ready. Season with salt and pepper

  3. Add the rest of the ingredients – double cream, smoked cheese, gherkins, seasoning. Keep on the hot plate until the cheese melts and the sauce thickens

Plate and sprinkle some grated parmesan cheese (optional).

Serve with toasted bread and fresh salad. I also served rice with vegetables to go with it.
