Dish You Can Have Any Time Of The Day – Mushroom Roll

The other day I found at home one very interesting cooking book (Манастирска кухня – автор Димитър Мантов), which gave me the inspiration for yesterday dinner.

I am presenting to you a recipe for one very easy to make, yet extremely delicious family meal suitable for everyone at home (adults and children, even toddlers if they would like to try it) – the Mushroom Roll.

The Mushroom Roll is a pastry filled with mushrooms and rolled. The pastry itself is very delicious, its buttery and light, inviting to have some more. The mushrooms and cheese add some consistency and make the dish filling. Just yummy!

Not only that, but this dish is universal – you can serve it as a breakfast, you can have it for lunch instead of your sandwich or plate it for dinner with fresh side salad. Your choice.

Ingredients (for 8 servings):
  • 1 ½ cups sieved flour

  • 2 eggs

  • 1 ½ cups soft butter (salted or unsalted, whatever you prefer or have)

  • 1 cup milk

  • ½ kg mushrooms, sliced

  • 1 cup oil

  • 100-150gr feta cheese

  • salt and black pepper

  1. Make the pastry by mixing the flour, pinch of salt, 1 beaten egg, butter and milk. Knead until forming a smooth dough, then wrap in a cling film and leave in the fridge for 2 hours

  2. Prepare the filling: fry the mushroom slices in oil for 5-10 minutes, season with salt and black pepper (according to taste). When the mushrooms have cooled down, add the crumbled feta cheese

You can use grated cheddar cheese instead, if preferred

  1. Roll out the dough in a thin sheet (about 3-5mm) over a piece of parchment paper, arrange the filling on top and, with the help of the parchment paper, roll the pastry

  2. Put the pastry in a baking tray, beat the yolk from the other egg and coat the roll

  3. Bake at 180-200°C for 40 minutes or until the roll turns golden

I served it with cherry tomatoes, which made the meal even more juicy. Enjoy this dish together with the people you love!

    Hi, thank you for keep sharing good recipe.
    I have tried most of your recipe here amd most of them are very easy to make.

    However, for this one, I dont think I will be able to do the pastry. I will never be good at baking things especially thing that needs precision like pastry.

    Dont you think I can by premade pastry? Will it still taste the same?

      This pastry is easy to make, just give it a try. But you can always use ready-to-roll puff pastry as well.

    What kind of mushrooms do you recommend? also, did you try it with the cheddar cheese? I can’t wait to give this a try, I will have to let you know how it ends up

      Hi Zach. My kids love mushrooms, that is why I made this pastry roll 🙂

      I used chestnut mushrooms this time, but you can use whatever you like, even tinned.

      I used both feta and cheddar cheese this time, but you can make it using only the cheddar cheese if you prefer.
