Do You Fancy A Cupcake This Afternoon? Try These Lovely Chocolate Cupcakes To Feel Like Celebrating Again

St. Valentine’s Day is over, yet you still love the people in your life – your other half, your children, parents and siblings, your friends.

Why not give them an easy to make cupcakes that would make this afternoon at the beginning of a new working week really enjoyable.

Below see my interpretation of the lovely cupcakes that I made today to meet my children when they come home from school, source: Make, Bake and Decorate Cupcakes by Nancy Lambert book.

These cupcakes are not only very easy to make, but they are quick to prepare and quick to bake. Then just enjoy them with a cup of tea or coffee.

Chocolate Cupcakesimage

Ingredients (makes 12 cupcakes):

  • 100gr self-raising flour

  • 2-3tbsp cocoa powder

  • 125gr butter, softened

  • 100gr brown sugar

  • 2 eggs

  • 3tbsp milk

  • chocolate chips (optional)

For the topping:

  • icing sugar

  • cocoa powder

  • whipped cream

Preparation:

  1. In a bowl sift the flour and cocoa powder, add the butter and rub it between your fingers to form crumbs

  2. Add the sugar, eggs and chocolate chips (if using) and mix. Then add the milk to make the mixture smooth.

  3. Oil the cupcake cases and put a tablespoon of the mixture in each of them.

  4. Pre-heat oven to 180°-200°C and bake for 15 minutes.

  5. When the cupcakes are completely cool decorate – use the icing sugar, cocoa powder and cream

You can use different stencils to make pictures on top of the cupcakes when decorating.

    She used to bake me red velvet cupcake and it is my favorite so far.

    Do you have any other suggestions for toppings? These days people like to use more complex flavors as the toppings, but I prefer traditional,

      Oh I love red velvet cupcakes as well, yum

      I would suggest always top the cupcakes with what you feel like eating – whipped cream, creme cheese frosting, buttercream frosting, chocolate frosting, fruits, coconut or chocolate swirls, etc.

      Hello. The pictures I post are all from my own home-cooking.

      I also love easy to prepare dishes as I don’t like when I spend too much time in the kitchen.

      I love cupcakes decorated with cream as this makes the pastry of the cupcake more moist and easier to chew haha. But I think you can decorate them in any way you like and enjoy eating.
