Don’t Have Time To Prepare A Delicious Dinner? Think Again, Try This Easy And Quick Chicken Recipe

I believe life in the 21 century is very busy. We go to work, we run errands, children start school very young and they have their tasks to do everyday. We just never have the time to stop and enjoy our time.

That is why I always try to prepare easy and quick recipes that are also delicious and would make the dinner time extra special.

Try this chicken recipe that you can make after coming home from work and while everyone gets ready for dinner. This recipe doesn’t need any special ingredients and the preparation takes no time at all.

All you have to do than is… sit on the table with the people you love and just relax.


Baked Chicken with Mayonnaise Baked chicken wih mayonnaise

Ingredients (4 servings):

  • 4 chicken thighs

  • 3-4 tbsp mayonnaise

  • 1 stock cube (vegetable, chicken, mushroom)


  1. Mix mayonnaise with the crumbled stock cube

  2. Top the chicken thighs with the mixture

  3. Bake at 200°C for 25-30 minutes until well cooked

Serve the baked chicken with fresh salad or your favourite potato salad.

Easy and delicious!

    Do you think that this would be good for young kids as an after school snack, or would it be better suited for dinner? Because my kids tend to always be hungry when we get home from school, I was thinking this might get them through until we actually have dinner.

      Hi Andrew. I think the recipe might be used as a snack, because chicken meat is low in fat and will fill them up to be able to wait for dinner. I would only suggest to use plain (or strained) yoghurt, pesto or houmous instead of mayonnaise if you are going to use the chicke as a snack.

    May I ask your opinion, what if I dont fancy mayonnaise?
    Is it possible to use other ingredients as replacement?
    Maybe cheese,

    This recipe sounds so easy and simple that I think suits busy people very well.

    Maybe with addition of more spices and herbs, it will be sublime!

      Thank you for your comments. I haven’t tried substituting the mayonnaise for this recipe, but because you don’t like it try using plain yoghurt or houmous with different condiments, or maybe mustard. Hope you like it

    I never tried a recipe where you add mayonnaise before baking. We usually add it later. I found information that mayonnaise can be used as a substitution for eggs and fat. So it makes sense to add it before baking.

      Hi Tamara. My family usually eats mayonnaise after preparing the dishes – meat or potatoes.

      But using mayonnaise in this recipe when cooking the chicken, doesn’t make it greasy, it makes it stay juicy.

      What I like about this recipe is not only that it tastes amazing, but that you can do it in no time – while wash my children’s hands and prepare them to sit on the table, the dinner is ready.

    Hi Ellie,

    I like those very simple recipes that can be made in 10-20 minutes. Most of the time they are much better than those fancy ones in restaurants where you have to paid xx$. I think that adding mushrooms can fit it well.
    What is potato salad or what do you mean by that?

      Hi Simon. I agree that sometimes the easiest to do recipes can be extremely delicious.

      Potato salad is a salad made with potatoes 🙂 I usually use boiled potatoes, spring onion, red onion, salt, black pepper, parsley, oil and vinegar. You can also add mayonnaise if you want, I usually don’t.
