Easy And Yummy Dinner During The Holidays – Open Chicken Cordon Bleu

You all, by now, probably know that my favourite meat is chicken. It is tender, delicious, you can easily prepare million different dishes, even my children have no problem chewing it and eat it.

Cordon Bleu is one of the dishes you can prepare with chicken and you cook it with cheese, which makes it super yummy.

I am presenting one very easy recipe for dinner that would help you use the leftovers of the Sunday or festive roast, a recipe for cordon bleu I found – click here to see it. I cooked it not exactly to the instructions, but adapted the recipe to my family’s and mine preferences.

I should say that the dish was so easy to prepare, it was ready quickly and was so delicious when baked that I have no doubt that this recipe I would be making again and again.

I prepared the dish with the roasted chicken I had prepared the previous day for lunch, but you can definitely use even store-bought roasted chicken.

Open Chicken Cordon Bleu 


  • about 1kg roasted chicken, shredded to pieces

  • juice of 1 lemon

  • 1-2tsp garlic powder

  • salt and black pepper

  • 6-8 slices ham, to cover the tray

  • 100gr cheddar cheese, grated

The recipe calls for slices Swiss cheese, but because my little ones love cheddar the best, I made it with cheddar cheese and it was still extra scrumptious.

For the sauce:

  • 1 cup milk

  • 50gr butter

  • 1 cube chicken stock

  • 1-2tbsp mustard

  • ½ tsp nutmeg

  • pepper

For the topping:

  • 1 cup breadcrumbs

  • 1tsp garlic powder

  • 1tsp dried basil

  • black pepper

I know that I didn’t prepare the dish according to the original recipe, but the end result was so delicious and was exactly what my loved ones like, so I have no regrets for making those small changes.

The way I prepared it, I think, was also easier.


  1. Prepare the sauce: in a pot add all the ingredients for the sauce and heat them. Leave it aside till needed

  2. In a casserole tray arrange the shredded chicken meat and add the juice of the lemon, garlic powder and black pepper

  3. On top, lay the slices of ham and then the grated cheese (or sliced cheese)

  4. Pour the sauce over the dish and spread all over

  5. Prepare the topping by mixing the ingredients and cover the dish with it

  6. Bake at 180°C for 30-35 minutes or until golden in colour

I served it with fresh salad – cherry tomatoes, baby salad leaves, spring onion, olives to add some freshness after the lavish festive dinners we had the previous days with the family.
