My husband just loves the full English breakfast and you can not have a full English without the egg. I should admit that recently I started eating eggs for breakfast as well and I feel really energised, not hungry and full of energy after that.
Today I offer you to try preparing a delicious breakfast (or side dish) in just seconds, make your eggs in the microwave.
This way of cooking the eggs is very easy, extremely quick and the eggs are still delicious.
I’ve used this method of cooking eggs for years, but now during the summer I started applying it more often as I just needed to have a few more minutes in bed in the morning.
I usually prepare scrambled eggs or poached eggs in the microwave. I sometimes use cheese and ham for my scrambled eggs and get something like a quiche in a cup. Just an easy, really scrumptious, healthy breakfast.

Eggs in the Microwave
Ingredients (for 1 egg breakfast):
ham and cheese, cut in small (optional)
salt and pepper
Crack the egg and put in a small bowl or ramekin, beat a little bit, add ham and cheese, if using, and seasoning.
Microwave in the highest power (700W) for 30-40 seconds. Check, if not ready or you prefer your egg harder, return and microwave for further 30 seconds.
Put a little bit of water in the bowl or ramekin you are using.
Crack the egg and add it to the bowl. Cover with a plate and microwave for 60 seconds. If needed, microwave for a further 20 seconds.
Plate and season.
Serve the eggs for breakfast, as a side-dish or as a complement to your salad.
