Filled Courgette Boats – Nice, Light and Yummy Autumn Dish

Like you all probably know already I really like courgettes and I like filled courgettes as well. I like that it is a complete dish, looks very good and usually it is very delicious (maybe because we always fill the courgette boats with what we feel like eating on that day).

Today I am presenting one recipe that is very traditional in my family, I have eaten it since I was a girl and now I like preparing it for my loved ones.

Try this easy and not time consuming recipe of Filled Courgette Boats with minced beef.

I’ve decided to fill the courgettes with a satiating, warm, wholesome filling – mince beef, onion, tomatoes, so that to get a really warming dish that would satisfy the hungry mouths at home after the long day they’ve all had.

Filled Courgette Boats with Mince Beef

Ingredients:

  • 4 medium courgettes/zucchinis

  • 200gr minced beef

  • 4-5 tomatoes, cut in small pieces

  • 2 onions, cut in small pieces

  • seasoning – black pepper, dill, parsley, paprika

  • 2-3tbsp olive oil

Preparation:

  1. Cut the courgettes in half lengthwise and using a spoon remove the seeds, cut them in smaller pieces and keep for later

  2. In a deep pan, over low-medium heat, heat the olive oil and fry the onion until brown, add the minced beef and fry for 5 minutes

  3. Add the tomatoes, courgettes seeds and seasoning and keep on the hot-plate for 10 more minutes, stirring occasionally, until it thickens and the liquid disappears

  4. Place the courgette boats in an oiled tray and spoon the filling

  5. Bake in a pre-heated oven at 200°C for 25-30 minutes, until the top gets well baked

Plate the courgette boats and serve with a salad.

I used a fresh tomato, spring onion and feta cheese salad.
