Fish And Potato Salad – Easy Super-Delicious Dinner For The Whole Family

My family loves to eat fish. I personally would prefer chicken for a meat dish, but even I sometimes succumb to the majority at home 🙂

Today I made an easy to prepare recipe of mackerel fish, baked with herbs and beer and served it together with all-time favourite side dish – potato salad. See the recipe below.

I like mackerel fish, because it doesn’t taste too fishy (of fish I mean), it’s not too fatty and/or greasy, like every fish you can cook it very fast and it goes well with most of the herbs and condiments.

The recipe I am presenting today is suitable for the whole family. Even people who usually don’t like to eat fish told me that this is a recipe they would try to make for their family next time.

I usually serve the fish with potatoes so that to add some carbohydrates and satisfy the hungry people at home. This time I made one extra scrumptious potato salad.

Mackerel Fish with Potato Salad with Sun-dried Tomatoes 

Ingredients (3-4 servings):

  • 2 mackerel fish, cut in round pieces and cleaned from most bones

  • 2 garlic cloves, cut in small

  • 200ml dark beer (or any)

  • salt and pepper

  • 1tsp each paprika and basil

For the potato salad:

  • 5-6 big potatoes, boiled and cut in cubes

  • 100gr feta cheese, cut in cubes

  • 10-12 sun-dried tomatoes, cut in pieces

  • oil from the sun-dried tomatoes

  • seasoning – salt and pepper

Preparation:

  1. Mix the garlic, beer and seasoning and mix until you get a paste

  2. Lay the fish pieces in a greased tray and using a tea-spoon cover with the marinade

  3. Bake in the oven at 180-200°C until golden and crispy

Potato salad:

  1. In a big bowl, mix the boiled potato cubes with the feta cheese and sun-dried tomatoes

  2. Season with the olive oil from the sun-dried tomatoes, salt and pepper
