During the summer I love preparing different meals using only vegetables. And today I want to present one recipe that is traditional for the country I come from, my family is used to having it regularly and I think it is really delicious – fried peppers.
I prefer to use a jar of roasted, pickled peppers when making this dish, because these peppers are already soft and have yummy flavours. I have never tried frying fresh peppers as they tend to need much time to get softer all-through, but if you prefer a non-pickled vegetables than you can roast the peppers first, peel the skin and then fry them. Yum!
I think this recipe is very easy to make and can be used as a light meal, appetizer or main dish. When I prepare fried peppers I usually serve them with garlic sauce or tomato sauce, but you can serve them with fresh salad, baked potatoes or whatever sauce you prefer.

Ingredients (4 servings):
1 jar roasted red peppers, about 7-8 big peppers
2 eggs, beaten
1 cup flour
oil for frying
Heat the oil in a frying pan
Dip the peppers in egg and then in flour, cover completely
Alternatively, for crispy cover, you can dip the peppers first in flour, then egg and finish by dipping them in breadcrumbs.
Fry in hot oil for a couple of minutes each side, until golden in colour
Serve hot or cold, they would be equally delicious.
