Gluten-Free Cookies With Oats And Yoghurt – Yummy And More Healthy

As you already know I’ve incorporated the gluten-free diet into my son’s life and, although at the beginning I found it difficult to replace everything at home with gluten-free option (and believe me gluten can be found in very unexpected places like soups and sauces even), but now I can say that eating gluten-free meals can be just as delicious as eating the everyday food you are accustomed to.

My little one loves sweets and biscuits and when I decided I wanted my family to start eating gluten-free meals (for medical reasons), I made cookies to see if he would make the difference. Click here to see the gluten-free shortbread chocolate chips cookies I made at the beginning of our trip to him being more healthy.

Today I am presenting another recipe for gluten-free cookies that I made together with my children when we were expecting some of his friends to come over to play.

This recipe is super easy to make, extra scrumptious and I can say that all the kids that afternoon really loved the cookies.

Give them a try yourselves!

Gluten-free Cookies with Oats and Yoghurt

  • 1 cup gluten-free white flour, sifted

  • ½ cup cornmeal flour

  • 1tsp each baking powder and baking soda

  • 1tsp cinnamon

  • 1 banana, mashed

  • 1 cup brown sugar

  • ½ cup vanilla yoghurt

  • 1tsp vanilla extract

  • 1,5 cups gluten-free oats

  • 100gr chocolate chips

  • chocolate spread, for decoration

  1. Mix all the ingredients, except chocolate chips, in a large bowl, stir well until all ingredients are well incorporated. Add the chocolate chips and stir

  2. Line a tray with grease-proof paper and using a spoon place the cookie mixture, leave some space between each cookie. Place the tray in the freezer for 10-15 minutes

  3. Heat the oven at 180-200°C and bake the cookies until golden

  4. When ready leave them to cool down completely before decorating them – I’ve used chocolate spread to cover them and sprinkled some edible glitter

Treat your loved ones!
