Gluten-Free Pancakes – Delicious Breakfast Or Dessert

Who doesn’t like pancakes? My family sure does adore them and, although they disappear faster then I can prepare them, I try to treat them as often as I feel like doing it.

I know that pancake day came and went, but today I want to offer you to try my first ever gluten-free pancakes. I used the same ingredients I’ve always used to make our pancakes at home, but this time I used a gluten free flour.

I should admit that instead of substituting the flour in the recipe entirely with a gluten-free option, I used ½ gluten-free white flour and ½ cornmeal flour. The pancakes got a little bit thicker than I expected, even when using the same quantity of batter as I usually do, but still so delicious.

My family couldn’t tell the difference in taste, the only unusual thing was their consistency, but I think that is from the flour used, maybe more from the cornmeal than from the gluten-free white flour.

I would continue experimenting and would let you know about the results I got.

The recipe I am presenting today could be done with the usual white flour or like me, using a gluten-free flour. The batter is very easy to prepare, I love its flavours, that is my family pancakes recipe. The pancakes you would get are sweet, aromatic, smooth, so delicious.

Gluten-free Pancakes 

Ingredients (8 pancakes):

  • 3 eggs

  • 1 cup milk

  • 1 cup gluten-free flour

  • 1tsp vanilla extract

  • 4-5tbsp sugar

  • 1tsp cinnamon

  • pinch of salt

  • butter, for frying

Preparation:

  1. Beat the eggs, add the flour and milk and stir well

  2. Add the vanilla, sugar, cinnamon and salt, stir until you get a smooth batter

If you need you can add more flour or milk to get the consistency of the batter you desire

  1. Grease a pancake pan with butter and using a ladle pour from the batter into the pan, spread it evenly and fry until ready from this side, turn and fry until ready

  2. When you remove the pancake from the pan spread butter on top of it when still hot and before you place the next pancake on top of it in the plate. Continue frying until you have no batter left
