Healthy And Yummy Green Soup – Recharge Your Batteries

My family and especially my little ones love soup. Because of that and because my son, who has very special needs 🙂 and eats only green soups, today I am suggesting we do a soup by mixing some vegetables and legumes – lentil soup with spinach.

The soup I am presenting today is extremely easy to make, is absolutely delicious and you can have both hot and cold. Not only that, but that soup is very healthy, made only with vegetables and legumes, and will definitely satisfy your hunger. This green soup will bring spring mood on the table and you could have it as part of your gluten-free diet as well.

I admit that I creamed the soup (although I don’t usually cream the lentil soup), because my kid prefers to eat such kind of soups, but I would suggest you cream it as well, using the kitchen blender. Creamed soup looks really beautifully and is very pleasant on the eye, but also, because we are using vegetables and legumes (with different shapes), it would be easier to eat it. But, of course, you can do it the way your loved ones prefer the most.

You can add different vegetables if you want, try adding 1-2 potatoes to make the soup thicker and smoother in taste. I added spinach mainly because my little one asks only for green soups and no matter what kind of soup I make, I have to make it green 🙂

Lentil Soup with Spinach

Ingredients:

  • 125-150gr red lentils

  • 2-3 carrots, cut in rings

  • 200gr spinach (fresh or frozen)

  • 2-3 onion, cut in half-rings

  • 1-2tbsp olive oil

  • 1,5 chicken or vegetable stock cubes

  • 2 litre water

  • black pepper, parsley

Preparation:

  1. In a pot heat the oil and fry the onion for a few minutes

  2. Add the carrots, spinach and lentils

  3. Pour the water and season with the stock cubes

  4. Boil over a medium heat for 20 minutes, season with black pepper and parsley

Cream the soup until smooth and enjoy.

Serve with home-made warm bread or like my kid had it – with some crackers.
