I love jacket potatoes. When I first started preparing this dish, I used them mainly as a side-dish to accompany the main that I had served. But now, I like to prepare jacket potatoes with different fillings and I think they are a good, light, satisfying and filling dish to have with the people you love without spending too much time preparing something extra delicious.
Today I want to share with you the way I prepare the potatoes when I want to make jacket potatoes for my family. I know that is something very easy to make and yet it took me years of experimenting to finally find the way I and the people I love like our potatoes the best. This way to prepare the potatoes is super easy, doesn’t need much preparation, just enough time to bake the potatoes. Then all you need to do is cut the potato and fill it up with the filling you and your loved ones prefer the most.
Not only that, but you can always fill your potatoes with different filling and have a choice what to have for dinner.

Jacket Potatoes Tonight
6 potatoes, medium-to-large
filling – crème cheese, salmon, spring onion, grated cheddar, fried mushrooms, baked onion, ham, olives, tomatoes, etc. (optional)
Wash the potatoes and dry them with kitchen paper, do not peel them
Oil your hands and rub the potatoes
Line a baking tray with grease-proof paper and arrange the potatoes. Bake at 180-200°C for 1–1 ½ hour
When ready, cut a cross at wide side of the potatoes and spread your favourite filling
Serve with your favourite fresh salad. Enjoy as a main dish or use as a side dish for meaty meals.
My family usually chooses filling with crème cheese and what else they want at this moment – other vegetables (tomatoes, olives, spring onions, etc.) or meaty supplement.
