Lemon Pancakes – Fresh And Yummy

I like weekends, when you can spoil your loved ones with different things they love to eat. That is why today I am offering you to try something really yummy that you can do quickly in the morning – lemon pancakes.

The batter takes no time to be made, then all you have to do is to fry quickly the pancakes and you would have a really scrumptious breakfast that the people you love do not have every day.

I like lemony pancakes, because they are not so sweet and the lemon gives an extra freshness to this meal. I, personally, like my pancakes to be sweet and that is why I add sugar when I make the batter. If you prefer yours sourer, you can skip the sugar and sweeten them only with the jams and spreads you are going to serve the pancakes with.

Lemon Pancakes   

Ingredients (I made 6 medium-large pancakes):

  • 100gr plain or self-raising flour

  • zest and juice of 1 lemon

  • 300ml milk

  • 2 eggs

  • 2tbsp sugar

  • 1tsp vanilla extract

  • jams, lemon curd and/or honey, to serve

  • butter spray for frying


  1. In a large mixing bowl add the flour, sugar and lemon zest

You can add a 1-2tsp poppy seeds, for texture and colour. I prefer not to use them.

  1. Beat the eggs and mix with the milk. Add to the flour and stir until well combined and smooth

  2. Add the lemon juice and vanilla extract, mix well

  3. Heat the frying pan and when ready, spray butter. Then, using a ladle, pour from the batter. Fry until the pancake starts lifting and turn it to fry both sides

Serve pancakes warm with your preferred filling. My family liked them best with honey 🙂
