Make A Pie Today, Easy After-School Meal

I usually buy the quiche, very rarely try to make it myself. That was until I found Tesco’s food-site recipe for quick and easy to make pie that gave me the ingredients how to make the pastry for the meal, click here to see it.

I made the pastry following the recipe’s instructions, but made the filling more according to my family’s taste. I’ve changed some of the ingredients, but still the end results were super yummy.

I was glad that we got a delicious meal, combining the bacon’s smoky flavours with the broccoli and courgettes really delicate taste. I’ve used crème cheese, instead of double cream, to make the filling really creamy and smooth.

I really liked how easy the pastry is to make. Since I first saw the recipe, I’ve made this pastry quite a few times and baked different quiches/pies with different fillings, each one of them as tasty as all the rest before it.

Pie with Broccoli and Courgettes  


For the pastry:

  • 110gr flour

  • 50gr cold grated butter

  • pinch of salt

  • water

For the filling:

  • 1 small broccoli head

  • 3-4 bacon rashers, baked

  • 2 small-to-medium courgettes

  • 3 eggs

  • 250gr crème cheese/soft cheese

  • salt and pepper

  • 75gr grated cheddar cheese

  • 2-3tbsp olive oil



  1. In a mixing bowl mix the flour with the butter and salt until you get flour crumbs. Add cold water, little by little, and using your hands knead the ingredients until you get a pastry ball

  2. Cover with cling-film and put in the fridge for at least 30 minutes


  1. Wash the courgettes and cut them in slices. Arrange in a baking tray lined with grease-proof paper, cover with olive oil and season with salt. Bake at 200°C for 15-20 minutes, until golden

  2. Bake the bacon rashers in the oven as well, then cut in small pieces

  3. Boil the broccoli, on the hob or in the microwave, and cut the florets in small pieces

  4. In a mixing bowl mix the soft cheese, eggs, cheese and seasoning, stir until well mixed

  5. When ready to assemble the pie, get the pastry out of the fridge and roll it out, cover the bottom of the baking tin you are using. Using a fork, prick the roll out pastry all over and bake at 200°C for 18-20 minutes

  6. Remove from the oven, arrange the baked courgettes and boiled broccoli over the pastry, sprinkle the bacon pieces

  7. Pour the cheese and egg mixture on top and bake at 200° for 40 minutes, until golden
