Make Something Delicious To Show Your Mum That She Is Really Special This Mother’s Day – Try This Mascarpone Brownie Cake

I love chocolate and I love my mother. Now that I am a mother as well, I treasure Mother’s Day as it reminds me that I have some very special people in my life – my children.

This Mother’s Day I invite you to cook a special cake and show your mum that she is loved.

I decided to treat my family with one very easy to make recipe, a cake that takes almost no time to prepare and is very light to eat (but unfortunately still has a lot of calories, because of the chocolate and sugar).

Try this Mascarpone Brownie Cake and you will love it. I like using mascarpone, especially when preparing desserts and cakes, as it makes the batter very light to taste and really moist. Enjoy!

  • 125gr unsalted butter

  • 100gr plain chocolate

  • 1 cup sugar

  • ¾ cup flour

  • 5-6tbsp cocoa powder

  • 3 eggs

  • 200-250gr mascarpone cheese

  • 2tsp vanilla extract

  • ¼ – ½ tsp salt

For the topping – use a ready-made chocolate topping or make it yourself, using:

  • 150gr plain chocolate, chopped

  • 3tbsp unsalted butter

  • 6 tbsp double cream


I always prepare this recipe in a glass mixing bowl

  1. Melt the butter in the microwave oven, add the chocolate and stir. If needed return the bowl to the microwave oven for the time needed to melt both ingredients

  2. Add the sugar and stir thoroughly. Then add mascarpone, vanilla, eggs (one by one) and mix well

  3. Sift flour, cocoa powder and salt in the mix and mix until well combined

  4. Pour the mixture into a tray/cake tin and bake for 50-60 minutes at 160°C. When ready, leave to cool on a wire track

  5. While cooling, prepare the topping by warming the cream and butter (in the microwave oven or over boiling water) and adding the chocolate, stir until everything is smoothcake

  6. Pour the topping over the brownie. Cut just before serving

You can top the cake with your favourite things as well – whipped cream, fruit, chocolate shavings, etc.

Because this cake I prepared specially for Mother’s Day to treat my loved ones (because I am a mother), I used a heart-shaped baking casserole to make it even more special.
