Pasta With Spinach And Mushrooms, Another Easy Meal

My family love pasta recipes, almost anything we make using pasta is most certainly to be accepted, liked and eaten 🙂

Today I saw that I had a tray of chestnut mushrooms and decided to use them and prepare some green pasta (the only colour food my picky eater eats) for my kids and my husband to enjoy. I prepared a spinach and mushroom pasta with some tomato sauce.

The recipe is very quickly to make and almost in no time you could have a delicious meal freshly prepared for your loved ones. I like pasta meals, especially those without too much sauce. I like dry pasta, just flavoured with different ingredients. That is why today I am suggesting you try this recipe that is not only super easy to make, but you don’t need a lot of things to make it as well – I, personally, used only what I had in the kitchen or in the cupboards, my plan was only to make a yummy dinner.

I think the result was extra scrumptious and that is why I suggest you try it as well.

I should say that I’ve used pizza sauce to flavour this dish, but you can also try different pasta sauces or pesto, as long as you don’t put too much liquid when you cook, they all will work fine.

Pasta with Spinach and Mushrooms    

Ingredients (about 4 servings):

  • 250gr chestnut mushrooms, washed and cut in slices

  • 300gr frozen spinach

  • 1-2 onions, cut in small pieces

  • 1 jar-200gr tomato and herb pizza sauce

  • 300gr dry pasta- linguine

  • 2tbsp olive oil

  • salt and pepper

  • grated parmesan or other hard cheese you prefer, to serve

Preparation:

  1. Boil the pasta according to the packet instructions

  2. In a deep frying pan, heat the oil and add the onion. Fry for a few minutes until it starts changing colour

  1. Add the spinach and stir until defrosted and soft. Add the mushrooms and fry for another 5-7 minutes

  2. Season and add the pizza sauce (or the sauce you are using). Continue stirring until the mixture is well heated

  3. Drain the pasta when ready and add to the other ingredients, mix well

Plate the pasta meal and serve with grated cheese on top.
