Pizza For Minutes, Easy Middle Of The Week Dinner

I know almost everyone loves pizza. And, although I always try to serve more nutritional food, I sometimes agree with the majority of people at home and we have pizza for dinner.

The other day was one of those days. We had stew for dinner, but my special-needs kid decided that it would be a great idea to make pizza for daddy that day and, of course, everyone else agreed. I should tell you that I didn’t have anything to make pizza – not a store-bought pizza dough, not even time to make my own pizza dough. So, I experimented and we made pizza with bread slices.

I think the individual pizzas we had after just a few minutes were very delicious and for sure I would be making those again soon. This recipe is very easy, extremely quick and you get pizza to satisfy everyone’s appetite. I like it, because you can make different kinds of pizzas so that everyone to have exactly what they like as a topping for their pizza. I made the usual pizzas for me and the kids and a spicy one for my husband.

You can add different ingredients as well – mozzarella, salami, bacon, other vegetables, etc.

I think everyone enjoyed their time in the kitchen that evening – kids helped me make the pizza and then we had a relaxing and yummy dinner.

Pizza with bread-slices  

Ingredients (for 4 servings):

  • 4 slices of bread

  • 4tsp tomato puree

  • oregano

  • 100gr smoked cheese, cut in slices

  • 50gr black or green olives, cut in small rings

  • 50-75gr grated cheddar cheese

Preparation:

  1. Line a baking tray with grease-proof paper and arrange the bread slices

  2. Cover each bread slices with a tea-spoon of tomato puree and spread it all over it, season with oregano

  3. Arrange the smoked cheese slices and olives

  4. Sprinkle with grated cheddar cheese and bake in the oven at 190°C for 10 minutes or until ready and the cheese has melted

Serve immediately, with your favourite sauces or not.

I am really happy my kids begged for pizza that night and I could try something I have never thought to do before, make pizza with slices of bread. But the results were so worth it. Yum, Yum!
