Potato And Leek Bake With Smoked Cheese – Taste The Flavours Of Autumn

Leek is one of the vegetables that only my mum could use in a dish and it to taste gorgeous. I always tried to avoid it as I didn’t like its taste. Not until I decided to give it another shot and started using it in different recipes with ingredients and flavours that I liked and it turned out this vegetables is not only delicious, but you can prepare many dishes with it.

Try this easy to make autumn recipe that uses two very common, even plain vegetables – potatoes and leeks, but the result is so, so yummy.

I am presenting today a Potato and Leek Bake with Smoked Cheese* – tasty, wholesome, satiating recipe, a dish I served as a main course, but you can use it as a side dish or garnish for your main, like BBQ.

Give it a try and taste the smells and flavours of autumn while staying at home.

Ingredients (1 medium tray):

  • 6-7 medium potatoes, boiled and cut in slices

  • 2-3 leeks, cleaned and washed, sliced in circles

  • 200gr feta cheese

  • 2-3 eggs

  • 1 cup plain yoghurt

  • 125-150gr smoked cheese, slices

  • 100gr grated cheddar cheese

  • 50gr butter, sliced in small cubes

  • 2-3tbsp oil

  • dill for seasoning, salt and black pepper

Preparation:

  1. In a pot, heat the oil and fry the sliced leeks until tender, for about 5-10 minutes

  2. Oil the baking tray and arrange the potatoes, top with the leeks and crushed feta cheese

  3. Season with the dill, salt and pepper and arrange the butter cubes all over the tray

  4. Mix the plain yoghurt with the eggs and beat until well combined, pour it in the baking tray and cover the bake equally

  5. Bake for 20-25 minutes in a pre-heated oven at 200°C

  6. Remove from the oven, cover with the grated cheddar cheese and slices of smoked cheese, return to the oven and bake for another 5-10 minutes until it gets golden in colour and the cheeses melt

I served it as a main meal with fresh green salad.

    Hi, Ellie! What a nice idea of cooking leek! I really love eating leek with rice, with potatoes, even with celery and meat! This is a great idea for cooking leek with potatoes and yummy feta cheese (i am from Greece and i love feta cheese!) I will try it as soon as possible! My husband will adore it!     Great sounding recipe! Those are ingredients I would never put together so it is something that I will have to try. Do you know roughly how many calories are in a serving of this? I try to keep my diet healthy, but this is something that I won’t be able to resist. If it isn’t considered a healthy option I will have to give it a try on my cheat day! I look forward to reading about other great recipes in the future.

      Hi Ryan. I don’t know exactly how many calories there are in a slice/serving, but the cheeses (smoked and cheddar) would make it not a first option if you are eating healthy. To make it healthier try not frying the leeks (add them raw, just sliced) reduce the cheddar cheese, omit the smoked cheese and add some more plain yoghurt to form the topping.
