Pumpkin Soup – Warm Yourself With Refreshing Soup

As you know my little ones, and my husband, just love soup. I am lucky, because soup is not only delicious, but it is extremely healthy as well.

Today I am presenting a recipe for a pumpkin soup that I love to make to the people I love, a recipe suitable for the whole family. This soup is easy to prepare, but it may taste strange to some – after all we combine pumpkin (that is most often used in desserts) with bacon.

I know pumpkin may be a little bit sweet to use it to prepare a savoury dish, but its taste combined with the deliciousness, saltiness and smokiness of the bacon, is extremely scrumptious.

When serving the soup, you may add a splash of cream to make it even more yummy, although I usually don’t to that as my kids love the soup as it is.

Pumpkin Soup 

Ingredients:

  • 3-4 rashers bacon

  • 2 onions, cut in slices

  • 1kg pumpkin, cleaned and cut in cubes

  • 2-3 potatoes, cut in cubes

  • 1,5-2l chicken stock

  • seasoning – salt, pepper

  • 2-3tbsp olive oil

Preparation:

  1. In a big pot, heat the olive oil and fry the bacon

  2. Add the onion, pumpkin, potatoes, chicken stock and seasoning

  3. Boil for 20 minutes or until the vegetables are soft

  4. When the soup is ready, cream it with the kitchen blender

Serve hot with some cream on top if you want.
