Rice Up Your Dinner Tonight

Friday was a busy day for me. I had so many things to do and needed to prepare for the weekend, when the kids go to most of their classes, that I didn’t have time to cook almost anything special and I try to serve delicious food every day of the week.

I have the habit to cook quick meals during the week and something really special, and sometimes harder to prepare, on Friday night and during the weekends.

I wanted to cook some risotto, but because it turned out I didn’t have any arborio rice at home, I had to improvise. Because I didn’t have any spare time this Friday, that is why I made a meal that was so easy to make and also helped me use some leftovers from the fridge. I made rice with bacon, sun-dried tomatoes and spinach. My husband is a great fan of rice, he loves it as a main dish and as a side-dish, and he said this recipe was extra yummy. I made more rice so that to have something ready for the meals during the next days, but it just disappeared so quickly, nothing’s left.

The only thing I would do different next time I cook this recipe would be to use some onion and add it as well.

Bacon and chorizo rice    

Ingredients:

  • 4-5 bacon rashers, cut in small pieces

  • 100gr chorizo, cut in slices

  • 6-7 sun-dried tomatoes, cut in small pieces

  • 100-150gr frozen spinach

  • 2-3tbsp oil

I, personally, used oil from the jar of sun-dried tomatoes, because it is so delicious and adds flavour.

  • ¾ cup basmati rice

  • seasoning – salt, pepper, smoked paprika

Preparation:

  1. In a frying pan, heat the oil. Add the bacon and chorizo pieces and fry for a few minutes until ready

  2. Add the spinach and let it melt in the pan. Then, add the sun-dried tomatoes and rice and let it cover in oil

  3. Season and start adding the water to cook the rice. I started by putting 2 cups of hot water and letting the rice start boiling, stir form time to time

  4. When the rice absorbs all the water, put 2 more cups and continue cooking. When the rice absorbs the rest of the water, check the rice’s been cooked – if it is already tender, the meal’s ready; if not – add some more water and cook until ready to your likeness
