I like the idea to have everything for your meal in one pot, tray or plate. Not to have too many dishes on the table (prone for accidents) and not to think should I bite first from the bread and then have from the main dish or the other way around. That could be really confusing, especially for younger children and if everything on the table is so delicious.
That is why I loved this recipe I found online, a recipe contributed by Grace Parisi.
The recipe I am presenting below is inspired by this dish, but I made some slight changes and adapted it to the taste of my family.
The recipe is very easy to prepare, doesn’t take a lot of time and is one of my favourite recipes using fish. Salmon is a very delicious fish, delicate and doesn’t taste too fishy.
Try yourself this yummy warm salad!
Bread And Salmon Warm Salad
Ingredients (serves 4):
4 salmon fillets
5-6tbsp olive oil
300gr cherry tomatoes, halved
5-6 garlic cloves, cut finely
- lemon, cut in rings
seasoning: parsley, salt, pepper, paprika
In a baking tray tear the baguette to pieces, add the olive oil, tomatoes, lemon, garlic and seasoning. Mix well
Season the salmon fillets with salt and pepper, pour 1tbsp olive oil to each and nestle them among the other ingredients, you can cover with the bread and tomatoes
Bake in the oven at 200°C for 15-20 minutes, until ready
Serve immediately as the salmon gets really hard if you let it cool. Have a lovely meal!
