Salmon For Dinner? Easy And Quick Recipe

Yesterday, I didn’t have any time to cook something for dinner and that is why I opted for a very quick and easy option, but because I liked the results I am sharing it with you.

I decided to make something yummy, healthy and most importantly not needing any initial preparation – baked salmon in foil with noodles.

I admit, I saw the recipe on the bag that salmon came with (I used frozen salmon, that is what I had at home), the only thing I changed was that I added some sweet chilli sauce – I like it, it makes the meat juicy and adds flavours.

Also, I used instant noodles – to save time and still have something filling and satisfying on the table. I usually buy take-out chow mein, when we want noodles, but this time decided to go with the shop bought ones and they were fine. I’ve used chicken flavoured instant noodles so that the pasta not to be too plain in taste and to add some saltiness.

If you struggle to find time during the busy week to make a delicious dinner every day, you like me may choose to serve something that doesn’t take so much time to prepare.

Try this easy, quick and yummy recipe.

Salmon in foil with Noodles 

Ingredients (for 4 servings):

  • 4 salmon fillets

  • 2-3tbsp olive oil

  • 3-4tbsp sweet chilli sauce (plus some more for serving)

  • dry chives to serve (optional)

  • 2-3 packs chicken flavour instant noodles (about 130gr)

Preparation:

  1. Line a baking tray with kitchen foil and place the salmon fillets, add the olive oil to cover them

  2. Cover with foil and bake at 190-200°C for 20 minutes

I baked my salmon fillets from frozen, following the packet instructions for baking time.

3. After that time remove the foil from the top, add some sweet chilli sauce over the fillets and bake for a few more minutes

4. To prepare the noodles follow the packet instructions – place the noodles in a bowl and add boiling water, enough to cover them. Leave to stand for 5 minutes, then sprinkle the provided seasoning and mix well

Serve the salmon, add some sweet chilli sauce if you want, with the noodles.

Enjoy with a glass of wine with the person you love!
