Prawn Dinner – Easy, Quick, Light, Delicious

As you know I love seafood. I try, especially during the summer to offer different light meals with seafood and fish, so that my family to have a really delicious meal, but also not too heavy.

Today I am offering you to try one very easy recipe that you can make in minutes. I’ve used only a few ingredients, because that is all I had – prawns, red peppers, broccoli. My idea was to make something like a stir-fry, but with fresh vegetables. It was very easy to make it, very quickly and the results were extremely yummy.

I should say that I like to add garlic when I am preparing prawns, but because that evening my family had to be somewhere else as well, I skipped this ingredient. But I would recommend you use garlic, it adds flavour to the dish.

Prawn Dinner 

Ingredients (2 servings):

  • 250gr cooked and peeled prawns

  • 1-2 red bell peppers, cut in pieces

  • 1 small-to-medium broccoli head, boiled and cut in small florets

  • 3-4tbsp olive oil

  • 1-2tbsp honey

  • 2 garlic cloves, cut in small pieces (optional)

  • salt and black pepper

  • 2tsp sesame seeds

Preparation:

  1. In a frying pan, heat 1-2tbsp olive oil and add the prawns. Season and fry until golden in colour

  2. Remove the prawns from the frying pan and if needed add a little bit more olive oil. Add the garlic, if using, and fry for a minute on medium heat

  3. Add the peppers, broccoli and honey, season with salt and pepper. Fry for a few minutes until the vegetables are well flavoured and hot

  4. Add the prawns and sprinkle some sesame seeds

Serve hot, with or without sauces – soy sauce or sweet chilli sauce.
