I started the spaghetti theme last week and I wanted to continue it a little bit further.
I know everyone loves spaghetti, they are easy to prepare and you can add different ingredients and flavours and have really special dishes made.
Today I am presenting one recipe that doesn’t need a lot of preparation, all you need to do is add all the ingredients to the pot and cook them quickly. In less than 15 minutes of cooking time you will have a delicious bowl of spaghetti with red pesto and sun-dried tomatoes. Yummy!
This recipe is ideal for when you have no much time to cook, but want to surprise and/or feed the people you love. This recipe is good and for those intimate nights when you want to spend some quality time with your loved ones and don’t want to be too tired of slaving around the stove.

Spaghetti with Red Pesto and Sun-Dried Tomatoes
Ingredients (3-4 servings):
150gr mozzarella cheese, cut in cubes
half of jar sun-dried tomatoes, cut in small pieces
1 red onion, cut in small
1 red pesto jar, 200gr
seasoning – salt, black pepper, italian seasoning
In a large pot, put 1-2tbsp of the oil from the sun-dried tomatoes and fry the red onion for a few minutes
Then add the spaghetti, sun-dried tomatoes, red pesto and water (1-1.2 litre water), season
Bring to the boil and cook until pasta is ready, about 12 minutes, stirring constantly
When ready, add the mozzarella cubes, let them melt in the pasta
Serve with fresh salad. Enjoy with your favourite wine!
