My little one just loves soups and one of his all-time favourites is the spinach soup with rice.
This is a recipe my mum usually made around Easter, but I make it all through the year and, although my kid is a really fussy eater, he never once said No to that soup.
The recipe is very easy to make, like every soup you just need to add the ingredients to the pot and leave them to boil. Then, I usually cream the soup to make it really appealing, smooth and inviting to eat.
This recipe is ideal for the winter evenings when you need something hot to warm yourself, but it can be as delicious in the summer as well when you would love a nice, healthy, energizing bowl of deliciousness.
Try this easy and quick to prepare soup, suitable for the whole family.
Spinach Soup with Rice
1kg spinach, fresh or frozen
1-2 onions, cut in slices
2-3 carrots, cut in rings
½ cup of rice
2-3tbsp plain yoghurt
seasoning – salt, pepper
Put all vegetables and rice in a pot, add water (1,5-2l) and bring to the boil. Boil until the rice is ready, 15-20 minutes
Beat the egg, mix with the plain yoghurt and add a few tablespoons of the soup. Pour the mixture to the pot, season and boil for a few more minutes, about 5
When ready, cream the soup by using the kitchen blender
Serve with a splash of cream and toasted bread with cheese.
