Start The Year Sweet With Little Biscuit Cakes

Now that the new year has begun and the rhythm of the working and everyday life would be upon us soon once again, I wanted to make something that could make us all relax a little bit and enjoy the moment.

Today I want to share with you a recipe I recently tried and everybody at home liked a lot – little biscuit cakes.*

This recipe I tried, because I wanted to make something using my new cooking rings, click here to see them. And I am very happy with the results – easy to use tool, created quickly a yummy dessert.

This recipe I am presenting today would help you very easily to make little desserts for your family. The ingredients I’ve used made 4 little biscuit cakes with my cooking rings. Of course, you can use more or less of these and make as many as you need.

The preparation of these cakes is not difficult and doesn’t take a lot of time, only you need some power of restraint to wait till the cakes are shaped in the fridge so that you to be able to get them out of the cooking rings before serving and they to stay in shape.

I didn’t bother to decorate these biscuit cakes a lot, just sprinkled some chocolate chips on top and used the roughness of the biscuit mixture. You can decorate it to your liking, using cream, butter cream or sprinkles.


Biscuit Cakes  


  • 100gr rich tea biscuits, crushed to small pieces

  • 50gr melted butter

  • 100gr white chocolate, melted

  • 50-70 chocolate chips

  • 5-6tbsp blackcurrant jam


  1. In a mixing bowl, add the crushed tea biscuits, butter and chocolate. Using a spoon or your hands, stir the ingredients until well incorporated. Put them in the fridge for 20minutes and let it harden

  2. When ready to construct the cakes, take the biscuit mixture out of the fridge and add 50-70gr chocolate chips, mix well

  3. Arrange the cooking rings in a plate and start putting from the biscuit mixture, press it firm. Continue to put from the biscuit mixture until just above 1/3 of the cooking rings are filled

  4. Spread 1-2tbsp (or more if you prefer, I wouldn’t recommend putting too much though) of the blackcurrant jam on top

  5. Finish by filling up the cooking rings with the rest of the biscuit mixture, press gently and leave in the fridge until needed, at least for a couple of hours

  6. Plate by removing the coking rings and placing the cakes onto the serving plates, sprinkle some chocolate chips on top

I served these biscuit cakes with some cream, if you prefer you can use ice cream as well (optional).

Enjoy with the people you love or just relax with a cup of your favourite hot drink.
