Stuffed Bell Peppers – Easy, Healthy And Light Meal

I like cooking with peppers. They are a beautiful, colourful vegetable that lets you prepare so many different and extremely delicious meals.

Today I am presenting a recipe I made this weekend, because I wanted something quick, easy and light for one of the days when I was especially lazy and wanted my kids to spend more time outside while the weather was still sunny and warm (now it is raining again).

I like preparing this using especially red or yellow bell peppers, because they are sweeter than the green ones and provide colours for the table when you serve them. You can make this recipe using mini peppers as well, they would be as delicious as these.

Of course, you can add different stuffing to the peppers – add mushrooms, tomatoes, crème cheese, ham, etc. That day, my family just wanted stuffed peppers with feta cheese (something very traditional for my country), but I decided to add other delicious things as well and make it a meal, not only a side dish.

Stuffed Bell Peppers with Feta and Eggs

Ingredients:

  • 3 bell peppers (red, yellow and green) – washed and stems and seeds removed

  • 100gr feta cheese

  • 3-4 eggs

  • bunch of spring onions, cut in small

  • seasoning – salt, pepper, paprika, parsley

  • 50gr grated cheddar + for sprinkling over the peppers

  • 2tbsp oil + for greasing the baking tray

Preparation:

  1. In a frying pan, heat the oil and add the spring onion. Fry for a couple of minutes, then add the eggs and prepare scrambled eggs

  2. Season and add the feta cheese and cheddar cheese

  3. Oil a baking tray, fill the bell peppers with the egg and cheese mixture and arrange in the tray, cut side facing up

  4. Bake at 190-200°C for about 25-30 minutes, then sprinkle some grated cheddar cheese on top and return to the oven until nicely golden in colour
