Tomatoes are a fruit that every household has almost at any given time. If you are bored with slicing them for a salad, I am presenting one very easy, quick and delicious recipe suitable for the whole family – Stuffed Tomatoes.
You can add different stuffing and prepare different meals, but I chose one of my favourite ones – stuffing with feta, cheddar cheese, olives.
Sometimes I add fresh baby spinach as well when preparing this stuffing and everyone at home just loves it. You can also stuff the tomatoes with rice. That way you would have a satiating meal in no time.
I like that you can serve this recipe both as a main dish, or as a salad or side dish to accompany the main you have prepared.
You can also eat this meal either hot after baking or leave it till cold. It is still as yummy as can be.

Ingredients (for 4 servings):
200gr feta cheese, crumbled
70-100gr grated cheddar cheese
2 eggs, beaten
50-70gr black olives, cut in small
seasoning: salt, parsley, black pepper
oil for greasing the baking tray
You can add some other vegetables to the stuffing, like fresh spinach or spring onion, finely cut.
Place the tomato on a cutting board sideways and holding it where the stem is, cut it to remove the top. Scoop the tomato seeds, repeat with all the other tomatoes and leave to stand till you prepare the stuffing
For the stuffing, add the eggs, cheeses, olives, other finely cut vegetables if using and seasoning to a bowl and mix well
Stuff the tomatoes with a little spoon, grease a baking tray with oil, place the tomatoes with stuffed side facing up. Bake in a pre-heated oven at 200°C for 20-25 minutes or until turning golden brown on top
