Transform Leftovers Into A Delicious Main Meal – Baked Mashed Potatoes

I like mashed potatoes. They are easy to make and they go with everything – meat, baked vegetables, fish, cheeses, salads.

Of course, boiled and mashed potatoes are not very exiting to have, they can be even boring… especially for the little ones.

That is why, when I saw this recipe in this month’s Tesco magazine, I knew I have to try it. It’s a recipe that is super easy to make, doesn’t ask for any special ingredients and it’s extremely delicious. I was surprised that the old potatoes could taste so yummy.

See below one recipe that also helps you utilise some leftovers that nobody wants to have one more time, but you don’t want to throw away. That is usually the case with the boiled and/or mashed potatoes at home – we all love them, but we quickly got fed up with them.

This recipe – Baked mashed potatoes, will use the leftovers and will help you prepare one new and extra scrumptious dish that your loved ones would never guess is made with the ingredients they didn’t want to have earlier. At home, after I prepared this dish, it very quickly disappered. Even I couldn’t believe my eyes.

Baked Mashed Potatoes Baked mash potatoes

(recipe from Tesco magazine)

Ingredients:
  • 5-6 big boiled potatoes

  • 50-70gr butter

  • 100-150ml warm milk

Add more or less butter and milk, depending how you like your mash

  • 150gr cherry tomatoes

  • 100gr crème cheese

  • 100gr Cheddar cheese, grated

  • 3-4tbsp Parmesan cheese, grated

  • seasoning – salt, black pepper, parsley

Preparation:
  1. Mash the boiled potatoes with the softened butter and warm milk to make mash or use the leftover mash. Stir the crème cheese and cheddar, add the seasoning

  2. Transfer to an oiled baking tin, dot the cherry tomatoes and sprinkle the Parmesan cheese on top

  3. Bake until golden on top, with a nice crust

I served the dish with toasted bread and pickled salad – pickled red peppers, olives, capers, salt, vinegar, olive oil.

    This delicious!! We rarely have leftover mashed potatoes at our house because my kids just LOVE them (with butter and cheddar cheese on top). But wow… maybe I’ll need to make way more than normal just so I can try this dish – it looks incredible! What a great idea to dot in cherry tomatoes – I’ve got to try that! Yum!

      It’s easy and quick, but if you don’t have any mashed potatoes left or you don’t want to make any you can make it when you feel like doing something different. But this recipe is super delicious.

    I’m back again – love this website!!

    Finding a way to use leftovers is really important. We waste so much and in the financial climate, every little bit we can save is worth it!

    My mother used to take the chicken breast (we all liked the dark parts so this was usually left over) and turn it into a scrumptious rissoto!

    Anyway, I am off to try this recipe – if it’s like any of your others I am sure it will be amazing!

      I like the idea of using the chicken breast (that’s what usually everyone at home avoids as well) for the risotto. I would try this soon.

    Yum, this recipe for baked mashed potato is great especially for those leftovers one seems to always have. One of my biggest pet peeves is trowing away perfectly good food.
    I love trying my hands on new food especially those I didn’t grow up eatting. Keep coming with the great and healthy recipes.
