Trout With Vegetables – Yum And Healthy Dinner

As I have told you many times, I am not a great fan of fish, although I try to eat some from time to time, because it is good for our health. But again, since I started preparing the fish meals at home (not my mum or my nan any more), I found out that fish can be really delicious and not that fishy at all.

Today, try this easy to prepare recipe for trout with vegetables in the oven. The dish was extremely scrumptious, even I ate more than once :-). It is packed with yummy vegetables that are great accompaniment to the fish.

I, personally, used trout fish, just to test its flavours and I am very happy with my choice. Initially, I was going to use mackerel, but there was none left at the supermarket when I went for it. I think trout was a good choice, because it is not a dry fish, but at the same time it is not too fat and persistent in taste.

I like this fish dinner for the whole family and I would definitely make it again. If you want you may try preparing something really yummy for your loved ones tonight, something that is not too heavy to have so that to give your body some rest and some nutritions so important during the winter and especially this festive season when we (I) eat a lot of unhealthy stuff.

Trout with Vegetables in the oven  

Ingredients (4 servings):

  • 4 trout fillets

  • ½ leek, cut lengthwise and then sliced

  • 1 carrot

  • 1 onion

  • 250gr mushrooms

  • 1 red pepper

  • 2-3tbsp tomato purée

  • salt, pepper, chive

  • 1-2tbsp olive oil

Preparation:

  1. Cut all the vegetables in small pieces     

  2. In a frying pan, heat olive oil and add the leek and onion, fry for a couple of minutes, until tender

  3. Add the mushrooms and fry for a few more minutes, then add the carrot and red pepper, continue frying on medium heat until the vegetables are ready and all the liquid disappears

  4. Add the tomato purée and season, stir and mix well

  5. Wash the trout fillets and pat dry them. Using a spoon put 1-2tbsp of the vegetable filling and roll the fish, place in the baking tray. Do the same with the rest of the fish fillets

  6. Spread the rest of the filling around the rolled fish fillets in the tray, bake at 190-200°C for 15-20 minutes or until golden on top

Serve immediately after it’s ready, with fresh or potato salad.
